Egg and Avocado Salad

This is one if my favorite lunches! Like I need to get a private room while I'm eating it. And with Easter weekend, it feels appropriate to share an egg recipe. So here's something healthy you can do with your Easter eggs that doesn't involve gobs of mayonnaise.


There are an infinite number of versions for this so play with it. My version is...


2 eggs, boiled and chopped
1/4 avocado, chopped
1 TBS Greek yogurt 
Squirt of mustard (to your taste)
Pinch or so of All-Purpose Seasoning 

Just mix it all up and eat with cucumbers, red pepper slices, crackers, etc. The salad makes 1 red and 1 blue. 

Some additions to have fun...

Spicy? Add hot sauce or sriracha. 
Pickles? Add a little relish. 
Need more veg? Chop some red pepper finely and mix in.
